Nico Wells plans to start his own restaurant with his wife Ebony, calling it “Brunch By BLISS.” He thinks that though food is incredibly important, what makes people most want to come or not come back is the experience that they have. Regarding the name “I want people to have a blissful experience, experiencing bliss. If you look up the word bliss, another word for it is ‘heavenly,’ so that was my way of trying to include something spiritual into it.”

Bliss is the name that he gives his catering service, and he want to serve brunch at his restaurant. “I love breakfast man. I could eat breakfast for lunch, dinner, snacks, [and] dessert.” He also says,

“I feel like people don’t experiment with breakfast enough. People are afraid to try new things. Here in St. Louis we have a lot places, but I feel like I could bring something to the Lou that’s missing.”

The food at Brunch By BLISS will not be your average breakfast food, with menu items such as Pumpkin Pancakes with Cream Cheese Filling topped with Marshmallows and Candied Walnuts.

“I want it to be more of a café lounge to where people can relax [and] chill, just a real nice jazzy place.” Being a good host is important to Nico Wells; he provides a catering service for small parties and often cooks at gatherings for his friends. Being a musician, he would like to include music in Brunch By BLISS by having live music and poetry in the restaurant.
