In 2009 he decided to pursue his love for cooking and went to culinary school. As a kid he was a picky eater, but culinary school broadened his appetite. “It just flipped my whole world around. I was open to new foods and tastes, it was amazing.” Since his time in culinary school, he has worked in fine dining, baking, and more.
An experience that ignited Nico’s passion to have his own restaurant is going to Austin, Texas with his wife for SXSW 2014. Besides the music, they wanted to find and eat at the best restaurants in town. They ate at two great restaurants that they felt did not have an equivalent in St. Louis. After a lot of research, prayer, and conversation, they decided that they wanted to have their own restaurant.
